| Details:燩osition Summary:聽 This position is a day-to-day hands-on position responsible for all aspects of the culinary department.聽 Responsible for ensuring all areas of the kitchen are operating in an efficient manner.聽Primary Responsibilities (other duties may be assigned):路聽聽聽聽聽聽聽聽 Assist with training of all new hire cooks and utility staff.路聽聽聽聽聽聽聽聽 Supervise all culinary and utility staff.聽 Observe staff engaged in preparing, portioning and garnishing foods to ensure that methods of cooking, garnishing and portion sizes are in accordance with standards.路聽聽聽聽聽聽聽聽 Motivate employees and maintain a high level of morale and passion regarding the culinary department.路聽聽聽聽聽聽聽聽 Check areas for presentation and accuracy as prepared items are put into service.路聽聽聽聽聽聽聽聽 Supervise all culinary team members using menu and production guidelines as summarized on production lists, manuals and recipe cards.路聽聽聽聽聽聽聽聽 Assist with budget planning and control.聽 Assist in maintaining all food and beverage cost and quality controls, to include but not limited to food cost, beverage cost, payroll and operating expenses路聽聽聽聽聽聽聽聽 Assist with maintaining a quality of food that meets or exceeds customer expectations and company and hotel standards.路聽聽聽聽聽聽聽聽 Assist with ordering all food and beverages for the hotel.路聽聽聽聽聽聽聽聽 Ensure all operational standards are maintained.路聽聽聽聽聽聽聽聽 Recognize deficiencies and problem areas and bring to the attention of management.路聽聽聽聽聽聽聽聽 Create and Follow standards of recipe cards for all items on all menus.路聽聽聽聽聽聽聽聽 Follow our HACCP Plan for all food preparation and ensure food and beverage operation cleanliness.路聽聽聽聽聽聽聽聽 Assist with maintaining inventories and par levels.路聽聽聽聽聽聽聽聽 Complete physical inventories on a monthly basis.路聽聽聽聽聽聽聽聽 Have working knowledge of kitchen area and correct operation of all equipment.路聽聽聽聽聽聽聽聽 Ensure refrigerators, dry storage and other storage areas are cleaned and organized at all times.路聽聽聽聽聽聽聽聽 Ensure all areas of the kitchen, including by not limited to the prep line, utility/dish machine, banquet prep, are clean and organized at all times.路聽聽聽聽聽聽聽聽 Keeps and uses rotated food items.路聽聽聽聽聽聽聽聽 Assist in maximizing revenue and profit.路聽聽聽聽聽聽聽聽 Responsible for maintaining team member safety.路聽聽聽聽聽聽聽聽 Report any maintenance deficiencies to the engineering department by verbal communication and written maintenance request forms.路聽聽聽聽聽聽聽聽 Communicate effectively with your managers regarding work issues, while following the proper chain of command.路聽聽聽聽聽聽聽聽 Check out with manager at the end of the shift to give recap of day and update on department progress and production levels.路聽聽聽聽聽聽聽聽 Follow all State and Local safety and sanitation policies and procedures.路聽聽聽聽聽聽聽聽 Prior knowledge with Coaching & Corrective Action.路聽聽聽聽聽聽聽聽 May be required to work mornings, afternoons, evenings, and/or weekends.路聽聽聽聽聽聽聽聽 Attend all training and employee meetings as required by management.聽 Training and meetings are considered mandatory.路聽聽聽聽聽聽聽聽 Participate in the Ambassador on Duty program.路聽聽聽聽聽聽聽聽 Additional tasks and responsibilities may be assigned at the discretion of the Food & Beverage Director.聽 Furthermore, tasks and responsibilities may be added or revised based on the volume of business and the need for the work to be completed at the present time. | ||||
